SQUIRREL PIE

Prep Time:
2 hours
Ingredients
Utensils 3-4 squirrels - cooked and de-boned
Large pot
1 large can mixed veggies, long cut (or frozen 10oz. pkg)
Sauté pan
1/2 stick margarine
Regular size pot
1 large onion
Pie Shell1
7oz. can mushroom pieces
1 Tablespoon Worcestershire sauce
1 Tablespoon Italian salad dressing
1 glove garlic (crushed)
1 ea. beef and chicken bouillon cube
1 Tablespoon flour
Salt and Pepper
Directions
Parboil squirrels until tender and pick meat off the bones (save 3 cups of the liquid)
Sauté onions, mushrooms and garlic in Worcestershire sauce, Italian dressing and margarine until tender
Boil saved liquid add salt & pepper then flour until thick (this is your gravy)
Put first pie crust in bottom of 9 inch pie pan
Mix squirrels and veggies together, add half the gravy and put into the pie shell
Put second pie crust on top, cut slits in the top and Bake 1 hour at 350 degrees
Serve with remainder of gravy over top

Are you hankerin' for some hog? Get on board with the latest health craze in the nation and dig in to some groundhog.
We rounded up three of the most popular groundhog recipes on the web for your enjoyment... not your eatin' enjoyment- your readin' enjoyment.
Actually I'm quite surprised that anyone with a computer and the intelligence to get on the web was able to share these with us, but here they are. Technology is useful in so many ways.
Trailer Park Groundhog
Take gun (.22 cal is good). Load with bullets and accurately fire at head [Ed. Note: We're assuming the groundhog's head, not your own].
Skin groundhog and gut him. Clean out carcass with waterhose.
Cut critter into quarters.
Make up a big batch of your favorite marinade (make sure it has oil and vinegar to help tenderize the groundhog).
Throw marinade and critter pieces into plastic trash bag and marinade around 2 to 3 days in the refrigerator.
Take out marinated critter pieces and throw on the grill on low heat. Cook until rare to medium rare. Do not overcook, critter will dry out.
And no one likes their critter dry.
Country-Style Groundhog
1 groundhog
1/2 c. flour
1/4 tsp. salt
1/4 tsp. pepper
1/4 c. cooking oil
1/2 tsp. sugar
Clean and skin as soon as possible. Remove all sent glands. Cut off head, feet and tail. Cure in cool place by suspending from hook approximately 4 days.
When ready to cook, lard according to recipe.
Dress groundhog as you would a rabbit, removing the small sacs in the back and under the forearm. Soak groundhog overnight in salted water to remove wild flavor.
Combine flour, salt and pepper; rub into groundhog pieces. Brown grounhog in hot oil in skillet; sprinkle with sugar. Reduce heat and add 1/2 cup water. Cover and simmer for about 30 minutes or until tender. Remove cover and cook for 10 minutes longer.
Boil & Bake Groundhog from "Cookin' With Home Storage" by Peggy Layton and Vicki Tate.
Skin and clean the groundhog. Boil until tender. Remove from the water and season with salt, pepper and red pepper. Bake in an oven at 350°F. or cook over an open fire.

Whole Stuffed Camel
1 whole camel, medium sized
1 whole lamb, large sized
20 whole chickens, medium sized
60 eggs
12 kg rice
2 kg pine nuts
2 kg almonds
1 kg pistachio nuts
110 gallons water
5 lbs black pepper
salt
- Skin, trim and clean camel (once you get over the hump), lamb and chicken.
- Boil until tender.
- Cook rice until fluffy.
- Fry nuts until brown and mix with rice.
- Hard boil eggs and peel.
- Stuff cooked chickens with hard boiled eggs and rice.
- Stuff the cooked lamb with stuffed chickens.
- Add more rice.
- Stuff the camel with the stuffed lamb and add rest of rice.
- Broil over large charcoal pit until brown.
- Spread any remaining rice on large tray and place camel on top of rice.
- Decorate with boiled eggs and nuts.
- Serves a friendly crowd of 80-100.

I can personally attest to this. Most mornings, during a stay, I was often berated by one squirrel through a sreened in porch for not refilling the corn before having my morning coffee.  Well, he was a regular tenant after all.
Still, I love watching the few around here and make sure to accidentally spill a bit of bird seed when refilling the feeder.

We seem to get mostly suirrels and pigeons in our bird feeders. Funny how squirrels are convinced that bird food is squirrel food.

The chipmunks seem to have calculated their descent with amazing subtlety--their mathematical learning is evidently far in excess of ours--and to have carried out their preparations with a well-nigh perfect unanimity. Had our instruments permitted it, we might have seen the gathering trouble far back in the nineteenth century. Men like Michael Kane watched the rodents--it is odd, by-the-bye, that for countless centuries chipmunks have been the stars of war--but failed to interpret the fluctuating appearances of the markings they mapped so well. All that time the chipmunks must have been getting ready.
They multiply at an alarming rate and are undistinguishable from each other.The perfect war machine, they can climb up the face of a brick wall or flatten their body out to fit through 1/2 inch thick cracks.Their clever little food storage sacks can store up to a 3 day supply of food.Chipmunks are virtually impossible to catch since they run in zig-zag patterns that they are taught from birth.Weve only enough food and water to last us for 3 days and then we must venture out into the onslaught.We are surrounded.

Somebody better notify the red squirrels in my backyard of their dietary requirements, because these little buggers eat green pinecones as if they were corn on the cob.I have some ladders stored under 90 ft. high pine trees at the very back of my yard, that the reds have staked claim too.There are hundreds of soft green pinecones, perfectly stacked in rows in between the wrungs.These ammunition dumps are around 20 ft. long and resemble the symmetry of a North Korean missile storage facility.Im afraid to tell the reds that they arent complying with the R.odent D.ietary S.tandards.

Yes M'Lord, but nothing in my immediate vicinity.Lots of chestnuts, walnuts,butternuts and acorns within 100 yards.Hazelnuts would be in a valley about 2 miles from here.Maybe they've dug an undeground tunnel and have rails with minecarts!I thought I heard digging through the night.

Shouln't that grey squirrel have a secret red identity ? I remember, I think it was Colin Greenland, who disagreed with my dislike of Watership Down and did a movie poster for the sequel, showing heavily armed rabbits marching towards the viewer -- Just When You Thought It Was Safe to Go Back into the Burrow...
